Ingredients
1/2 cup parsley leaves
2 Tbs pine nuts
2 Tbs parmesan cheese, grated
1 orange, zested
1 clove garlic
1 (12 oz) pkg frozen sweet peas
8 oz fresh sugar snap peas, sliced lengthwise
2 Tbs orange juice
1 Tbs extra virgin olive oil
2 Tbs butter
1/4 tsp salt
1/4 tsp freshly ground black pepper
Directions
- On a cutting board, finely chop the parsley, pine nuts, cheese, zest and garlic until you have a fine, crumbly consistency. Adding a small amount of salt while chopping will help with this process. Place in a bowl. Add juice and oil. Set gremolata aside.
- In a large sauté pan over medium heat, melt the butter. Add sweet peas and snap peas. Cook until warmed through. Add gremolata, salt and pepper. Continue to stir until everything is hot and fragrant, about 2 minutes. Serve immediately. Garnish with additional zest.
